Egg White Muffin Melt

The perfect, quick breakfast to get you started in the morning the healthy way.
Ingredients
3 egg whites
Whole-grain English muffin
1/2 cup spinach
1 slice reduced-fat cheddar cheese
1 slice tomato
Preparation
Scramble the 3 egg whites. Cover half of the whole-grain English muffin with 1/2 cup spinach and cover the other half with 1 slice of reduced-fat cheddar cheese. Toast until the cheese is melted. Add the egg and 1 slice tomato.
This is a great way to start the day by cutting out the yolks and using just egg whites. The whole-grain English muffin is a replacement for regular bread and getting your veggies through spinach and tomato is a very healthy way to go about breakfast, the most important meal of the day.
